What was your original motivation for your blog? What keeps you motivated?

My original motivation was to share simple, healthy recipes for families.  Being a registered dietitian, I had heard so often that it was overwhelming coming up with dinners that were quick and easy, tasted good, and the whole family would eat.  I thought that was an area I could help people.  My passion is getting kids in the kitchen cooking.  This is something I have focusing on more with my blog.

Seeing people enjoy my recipes and posts is what keeps me motivated.  Having brands and companies start to believe in me and what I am doing, motivates me.  I have so much fun doing what I do, that it doesn’t seem like work, and that, too, is motivating!


If you could only eat one meal for the rest of your life, what would it be?

One meal?  Goodness, that is a tough one!  I would have to go with chicken fajitas.  I love Mexican food!


What has been your biggest cooking disaster?

I somehow didn’t pay attention to the pan sizes when making my banana bread recipe a few months back.  I put all the batter into one pan, rather than splitting it between 2 pans.  The mess that was made when it overflowed all over my oven was a nightmare.  And the smell of burning batter was no better!


What has been your go-to, favorite dish to make this summer?

I have been making marinated chicken thighs for the grill a lot this summer.  I make it in bulk for feeding a crowd when we are up north at my families cottage.  I save a huge plastic tub from Costco animal crackers – which has a screw top on it. It is perfect for keeping a lot of chicken, with the marinade, all together mess free!  Those chicken thighs on the grill are so delicious!  And it is a cost effective way to feed a crowd. 🙂


If you could travel anywhere in the world right now, where would you go and why?

I would love to go to Bora Bora and stay in one of those huts over the water.  I love traveling, warm destinations being my favorite.  There is nothing better to me than looking out at clear blue water with sand beneath my toes feeling the warm breeze. Dream vacation!
