Pineapple Cucumber Salsa
- 1 cup chopped pineapple
- 1 cup chopped cucumber
- 1/2 cup chopped cilantro
- 1/2 cup chopped red onion or shallot
- a squeeze of lime juice
- a pinch of salt
– Mix all ingredients together in a non-reactive bowl and toss to combine.
– Eat it. 🙂
* I suggest using a non-reactive bowl (which is basically anything besides metal) because acidic juices like like can sometimes react with the metal and give your food a metallic taste, which is pretty gross if you ask me!
