Meet our member of the month, Liz Kepplinger, the talented blogger behind Inspired By the Seasons.

What was you original motivation for your blog? What keeps you motivated?

The reason I started my blog was to share easy ways for families who visited our local food pantry to add fresh produce to their everyday cooking and snacking.  About the time I was considering starting Inspired by the Seasons, I went to a Wisconsin Whisk get together, and the support that they offered gave me the added encouragement to press go. My backyard garden and visits to the farmers’ market continues to feed my motivation for my blog, which will be one year old this month!

If you could only eat one meal for the rest of your life, what would it be?

If there was one meal I could eat for the rest of my life, it would have to be spinach and mushroom enchiladas.  I can’t imagine getting tired of that flavor combination.  Glad you didn’t ask me to choose one dessert!

Halloween is spooky, and sometimes food is too. What’s the grossest thing you’ve ever eaten?

The grossest thing that I took one bite of (because why would you take more than one?) would be the cold tongue and mayo sandwich my mother packed me for school lunch back in grade school.  

Pumpkin or apple? How do you use your favorite of the two?

Apple all the way!  I like them fresh, sliced and slathered in nut butter, shredded up in this brussels sprout slaw, sautéed in butter with thyme and currently experimenting with adding them to cocktails.

If you had to wear a food-related Halloween costume, what would you be?

Well, that would be the prettiest vegetable I grow – a beet.
