Makes 5 dozen cookies

Finnish Mordegspinnar Holiday Cookies

    • 1 cup butter
    • 1 teaspoon almond extract
    • 1/2 cup sugar
    • 1 1/2 cups sifted flour
    • 1/2 cup blanched almonds, finely chopped
    • 3 Tablespoons sugar
    • 2 egg whites

    – Preheat oven to 350 degrees
    – Cream butter and almond extract together, gradually add sugar, creaming until fluffy and light. Add flour in fourths, thoroughly blending after each addition. Chill in refrigerator several hours.
    – Combine almonds and 3 tablespoons sugar and set aside.
    – Pinch off small pieces of dough and with lightly floured hands, roll into log shapes about the thickness of your little finger, 2-3 inches long.
    – Brush with egg white and roll in almond mixture. Carefully place on cookie sheet. Bend into crescent shapes, if desired.
    – Bake for 10-12 minutes or until golden.
    – It’s best to transfer them to a plate as soon as they came out of the oven
