Makes 10-12 muffins

Banana Spinach Muffins

  • 1 cup fresh spinach
  • 2 ripe bananas
  • 1/2 cup coconut flour
  • 3 eggs
  • 1 tablespoon honey
  • 1 teaspoon baking powder

– Preheat oven to 350 degrees(f).

– Line a muffin or mini muffin pan with paper liners (or grease well with coconut oil).

– Blend all of the ingredients except the baking powder in the blender till smooth.

– Add the baking powder and blend just till mixed in.

– Fill cups about 3/4 full.

– Bake for 15-20 minutes.

– Allow to cool. Store leftovers in an airtight container in the fridge.
