Pecan Cheese Ball

  • 8 ounces cream cheese
  • 2 cups shredded white sharp cheddar cheese
  • 1/2 cuo finely chopped pecans
  • 3 green onions finely chopped white & light green parts
  • Crackers for serving

– In a large bowl mix together cream cheese, green onions and cheddar with a hand held mixer.

– Lay a 2′ long piece of plastic wrap on your counter.  Scoop the cheese mixture onto the middle of the plastic wrap.  Wrap the plastic around the cheese mound, then use your hands to corm it into a ball.  Chill for one hour minimum.

– Unwrap the cheese ball and using small handfuls of nuts at a time, press the chopped pecans onto the outer surface of the cheese ball.  No need to cover the bottom with the nuts.

– Serve with crackers.
